Mexican Potato Soup

5-6 Slices of Bacon
3 large potatoes, peeled & cubed
4 cups of water
1 – 15 oz. can diced tomatoes
1 – 8 oz. can Totato Sauce
1 jar MARIA RAE’S ORIGINAL SALSA
Grated Cheddar Cheese
Salt & Pepper to taste
Fry bacon until crisp, crumble and set aside. Put the potatoes in a large pot and salt & pepper to taste. Add remaining ingredients, except cheese, simmer 1 hour until potatoes are tender.
To serve: Put cheese in bottom of bowl & top with soup. Sprinkle bacon crumbs on top, and stir to mix. Serve with crunch French bread.
